Anthocyanins are red pigments extracted from grape skins during winemaking; they are one of the main compounds responsible for the color of young (unaged) wine. Wines made from small grapes could be expected to contain higher anthocyanin concentrations relative to wines made from large grapes due to the higher proportion of grape skins. Several authors report higher anthocyanin concentrations in wines made from small grapes obtained by particular cultivation practices (regulated irrigation deficit, winter pruning treatments). However, although Gil's research established a correlation between smaller grapes and darker wine color, similar concentrations of anthocyanins were observed among wines made from small, medium, or large grapes from the same crop. This result is not unexpected because anthocyanins differ in extractability and may undergo chemical degradation during the winemaking process.
